Have you ever been to Chelsea Market in NYC? It’s filled with quaint eateries and specialty food shops. I haven’t been to the market for a couple of years, but I have fond memories of Fat Witch Bakery, a bright little storefront filled with some of the best brownies known to man. They’re dense and chewy and perfectly chocolatey, and you can choose a basic brownie or a souped-up version with fun mix-ins like dried cherries, white chocolate or gooey caramel.
Fat Witch sells its brownies online, but they’re roughly $3 apiece – not exactly the most economical treat. Luckily, the next best option might be available in your local Whole Foods or specialty store:
Yes! Fat Witch Baking Mix! I nearly missed this on the store shelf, but Corey’s eagle eye scoped it out (proving yet again why I’m madly in love with that man). At $8, it was far more expensive than Duncan Hines but far cheaper than ordering a batch of brownies directly from Fat Witch. I decided it was worth the investment to see how the mix stacked up to the bakery version.
Couldn’t be easier…melt butter with the provided bag of chocolate chips:
Mix the melted chocolate with 3 eggs and a pouch of dry ingredients:
Bake and scarf:
Hey hey, my my, these were all kinds of fantastic. They had that nice brownie crust and a rich, slightly gooey filling. It’s been a few years since I had an authentic Fat Witch, but these tasted just as good as I remember. An $8 brownie mix isn’t something I’d purchase everyday, but it was a special treat that allowed me to bring a famous taste home without paying $3 per brownie. You can purchase these mixes online, but they might not be as economical when you factor in shipping costs. Look for them at Whole Foods or other gourmet grocers and enjoy a bit of witchy goodness.

I have been to NYC twice now in my short little life and have not been to that Market. I will be fixing that next time–fo’ sure! I did make it to The City Bakery which has quite the selection.
I have a weakness for anything chocolate–BIG SURPRISE. I am now on the hunt for these here in San Jose. They will be mine.
Your food photos are lovely by the way–tell me your secrets! Light lamp, light box, white plates or just raw talent??
bake and scarf indeed! if those were in my house i think i would have eaten them too fast to even get a picture
Those look FABULOUS! The photos are OUTSTANDING too…(it’s raw talent!) Wish I had one of those to have with my morning coffee!
Oooh, I don’t usually care much for brownies, but those look so gooey and moist, I might change my mind!
Whole Foods always has the best new baking mixes! I remember when No Pudge first came out and they were the first ones to carry them. I can’t wait to try this out! That brownie looks SO good!
Wow. That looks perfect!
I discovered Fat Witch when I was in NYC in 2006..loved it! I used to order the brownies for special occasions, so I was very excited when the baking mixes showed up at Fresh Market. Yum!
[...] and bar cookies. I didn’t know about this cookbook (though I have tried the Fat Witch boxed brownie mix), so I was thrilled to receive it. Thanks for the surprise, dear aunt. It was just what I needed to [...]
